ÆBLESKIVER

One traditional Danish Christmas treat is æbleskiver, which means ‘apple slices’ – although the modern recipe is apple-free. These delicious pancake balls are easy to make and best served with homemade jam, a dusting of icing sugar and a cup of gløgg, which is Danish mulled wine.

INGREDIENTS

  • 5 dl Flour
  • 1/2 tsp Salt
  • 2 tsp Sugar
  • 1 1/2 tsp cardamom, powder
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 3 Eggs
  • 4 1/2 dl Buttermilk
  • 3 tblsp Neutral Oil
  • 1/2 Vanilla pod – the seeds from it
  • 1 Lemon, the zest
  • Butter for the pan

Mix all the dry ingredients in a bowl; flower, salt, sugar, vanilla, cardamom, baking powder, baking soda and lemon zest. Divide the yolks from the egg whites. Mix the yolk together with the buttermilk and oil, and mix it into the dry ingredients afterwards. Whip egg whites. Mix egg white mixture into the dough by starting with 2 tablespoons of the egg whites and then gently mixing in the rest. Heat your Æbleskive-pan, which has round holes in it, and if you don’t have one, make them as waffles – they taste just as good. Fill the holes with a bit of butter, and then halfway with the dough. Turn the Æbleskiver with a small fork or knitting-needle 180 degrees when they start to crisp up and turn golden. Continue turning until baked all the way around. In the old days some added small pieces of apples, or raisins too the middle before turning, giving this little joy it’s name.
